PRAWN KOLIWADA:


                                                                                                                         
        Ingredients:
       12 deshelled shrimp prawns/ king size
1 tsp gram flour(
Besan)
         1tsp maida
         1tsp cornflour
1 egg
1 tsp
garam masala
1 tsp
chili powder/chili sauce
1 tsp ginger paste
1 tsp garlic paste
1/2 tsp lime juice
Salt to taste
Oil for deep frying

        Method:
       Mix gram flour(besan), maida, cornflour with well beaten egg.
         Add ginger paste, garlic paste, chili sauce, garam masala and salt.
         Mix all these well and add the prawns.
         Marinate them for 10 minutes and then deep fry in oil.
        Serve hot with green chutney or tomato sauce.
Serves: 2
Preparation time: 10-15 minutes

BATATA VADA SAMBAR




BatataVada
Ingredients:
 1/2 kg potatoes, boiled, peeled & mashed
 2 onions, chopped
 1 cup besan flour
 1/2 tsp garam masala
1 tsp ginger-garlic paste
 1/4 tsp baking soda
 3 green chillies, finely chopped
 Coriander leaves, chopped
 Salt to taste
 Oil for frying
How to make Batata Vada
1. In a pan heat 2 tsp oil and slightly sauté onions, add ginger-garlic paste.
2. Now add green chilies,boiled potatoes,garam masala,salt and pepper.
3. Add lime juice and coriander.
4. Mix well and make small balls of this mixture. Keep aside.
5. Add little salt and baking soda in the besan flour and make fine batter using water.
6. In a large Kadhai, heat oil. Immerse the potato balls in the batter and drop into the oil slowly.
7. Fry these balls on all sides until golden brown.  Keep aside.


Sambar

Ingredients

·         1 cup toor dal
·         2 tsp coriander leaves
·         2 tsp cumin
·         1 bunch curry leaves
·         ginger-garlic -2 cloves
·         1 tsp hing(asafotida)
·         1 tsp jaggery or sugar
·         2-3 small pieces Drumstick,
·         2 tsp brinjal, (chopped)
·         2 tsp potato(chopped)
·         1 tsp mustard
·         4 tsp oil
·         1 large onions(chopped)
·         salt to taste
·         tamarind water-1/2 cup
·         tomatoes -1 cut medium
·         1 tsp turmeric

 

Method

 

·         Boil water and pressure cook the dal with turmeric and salt.
·         Separate the cooked dal and water, and keep them aside
·          Heat pan, over medium heat, and add oil, mustard seeds, cumin seeds, hing, garlic ginger, curry leaves.
·         In the same pan, add drumstick, brinjal, onions, potato, tomatoes and fry them for 10min or till the vegetables are cooked nicely.
·         Then add mashed  toor dal(pressure cooked)
·         Add tamrind juice, salt, jaggary/sugar and add water and cook for 15min.
·         Garnish with coriander leaves enjoy with rice, idli ,dosa

PANEER CHILLI


Ingredients:

  • 350 gms Paneer 
  • 2 cup maida
  • 1/2 cup Corn Flour 
  • 1 tsp Ginger-Garlic Paste 
  • 2 cups Chopped Onions 
  • 2 cup capsicum
  • 2 tsp Sliced Green Chillies
  • 1 tsp Soya Sauce 
  • 1 tsp chilli sauce
  • 2 tsp Vinegar 
  • 1/4 tsp Ajinomoto 
  • Salt to taste
  • Oil for frying 
  • Little Water 


Method:
  •  Cut the paneer into cubes. 
  •  Mix together maida , corn flour, garlic, ginger paste, soya sauce, chilli                                        sauce and salt, add water to make a thik paste so it coat the paneer pieces with the mixture. 
  •  Heat oil in a pan and fry the paneer pieces coated with mixture till golden in color. 
  • Heat 2 tsp of the oil in a pan add ginger garlic paste and stir fry the onions and capsicum in it over high heat for half a minute. 
  •  Add the green chillies, salt, soya sauce, vinegar, ajinomoto and the fried paneer cubes. 
  •  Mix well, and garnish the chilli paneer with finely cut spring onions and coriander.

PAV-BHAJI BITES

                                                                                                                       Ingredients:

  •  French Bread Pieces
  • 1 Cup Pavbhaji
  • Cheddar Cheese
  • Chopped coriander for garnishing

Method:
Arrange 7-8 bread pieces on oven safe baking tray
Spread 1 tbsp Pavbhaji on each bread piece. Sprinkle little cheddar cheese.
 Preheat oven. Bake these Pavbhaji bites for 10-12 minutes or until cheese melts. 
Otherwise palce it in pan and it for 10 min or till the cheese melts.
Garnish with chopped coriander and serve hot.
These pavbhaji bites are great Tea Time Snack.

CHICKEN CURRY(Maharashtrian




Ingredients:
       1/2 kg Chicken
       • 3 tsp dry coconut grated
• 5 medium onions
• 1 tsp garlic paste
• 1 tsp ginger paste
• 1 tsp cumin Seeds
• 1/2 tsp turmeric powder
        2 tsp red chilli powder
• 2 tsp
garam masala
• 3 tsp vegetable oil
• Salt to taste
• Chopped fresh coriander, for garnish
METHOD:
Heat pan, add 1 tbsp Oil and fry chopped Onion and the grated Coconut.
Grind this together with ginger, garlic garam masala, red chilli powder and turmeric powder.Grind to a smooth paste.
Heat oil in a deep pan, on a medium flame.
Add cumin seeds the paste and fry till the oil begins to separate from the masala.
Now, heat oil in pressure cooker add cumin seeds ginger garlic, and green chill paste, then add some turmeric powder, salt and put  chicken  pieces and cook till 2-3 whistles..
Now add well cooked chicken pieces in coconut and onion paste and cook about 2min. Then add the remaining water from pressure cooker. If needed add some luke warm water.
Cook it for next 10mins.
Turn heat off and gently spoon curry into serving dish.
Garnish with chopped fresh coriander leaves and onion.
Maharashtrian Chicken Curry is ready.

GOLD COIN



INGREDIENTS:

  • White bread slices
  • 1 medium Green capsicum, chopped
  • 1 medium Onion , chopped
  • Garlic, chopped 4-6 cloves
  • Green chillies, 2-3
  • Fresh coriander leaves, chopped
  • 1tsp Ginger, chopped
  • 1tsp White pepper powder
  • Salt to taste
  • 1 tsp chilli sauce
  • 2 tsp maida
  • 1 tsp Cornflour
  • 3 tsp cheese
  • Oil to deep fry

METHOD:
Heat a pan, stir fry all vegetables with garlic, green chillies, coriander leaves, ginger, white pepper powder, tomato&chilli sauce, salt and mix well and Cook till soft.
Cut bread in round shape and Lightly roll maida and conflour on bread.
Heat sufficient oil in a kadai and deep fry the rounded shape bread(gold coins)till golden brown.
Place them on an absorbent paper.
Spread the mixture on each bread generously.
Then sprinkle some cheese and again heat that gold coin for 2min in a pan .
Then Serve hot with ketchup .
